馮Gene Hing (right) is the grandson of Gin Fong also known as “Charlie Ramsay”. Who worked for the Cone Ranch and T.H. Ramsay family in Battle Creek, CA in the 1860’s. He would remain the family cook until his death in March 1956.

Fong Clan

After the Tremont Hotel changed their menu to French cuisines, they no longer employed Chinese chefs. Hence, the Fong family moved and settled in Sacramento, California.

Ruby & Eddie Fong

Eddie Kontoon Fong born March 16, 1905 worked as a cook at the Tremont Hotel. He married Ruby Gee Fong (Mrs. Sue Gee Fong) of New Orleans, IL. All of their children with the exception of Ronald were born at 844 High (Rio) Street, Red Bluff, California: Edward (Eddie) Jr. born 1932, George born 1934, David born 1937, and Harry born 1939. Eddie died in Sacramento on September 17, 1991.

Jimmy Gun Fong & Lee Mee Gun

This image was take in Red Bluff. Pictured is Lee, Mee Gum with son, Arthur Fong, husband Jimmy Gum You Fong and son Edward Fong. After the Conard family sold the Tremont Hotel to the Forward family October of 1945, the restaurant was changed from American cuisines to French, thus leaving many in the Chinese community unemployed and forcing the Fong family to relocate to Colusa and then to 10th and W Street, Sacramento, California.

Ming Fong

Fong, Kee You lived at 825 High (Rio) Street, Red Bluff, California which today is named Historic Chinatown Alley. He was born in Sacramento on August 26, 1881 and worked at the Blue Ribbon Café in Red Bluff. His son Mee Ning Fong (Fong, Ming Ning) born January 1, 1922 worked for Arthur L. Conard as a cook and later lived at 1102 Solano, Corning, CA in 1940.
